Mouth watering

Tasting Armagnac is an experience rich in sensations. Firstly, it must be admired, then we breathe it in and lastly we taste it.  In the mouth, Armagnac caresses the palate and brings a series of sensations that we need to know how to interpret in order to understand its unique character.

After taking time to breathe in the fragrant scents that escape the glass, look at how the light sparkles through its golden colour ; now it is time to taste the Armagnac.

 

The first taste is a shy meeting.  A tiny sip is all that is needed to tickle the palate and let the scents open and train the taste buds.  We get to know each other.  On the second tasting, we tame the eau-de-vie and we start to decipher the different sensations on the palate.

 

The attack can be vigorous before slowly softening.  The sweetness, the heat, the alcohol and the mellow tannins from the wood bring smoothness and lighten the strength of the alcohol during the rising of the Armagnac.

 

Next, the aromas will unfold with varying amplitude and volume depending on the age of the eau-de-vie.  It is at this moment that the aromatic palette exposes the character of the eau-de-vie.

Bouquet and peacock’s tail

Contact with the inside of the mouth provokes different sensations.  If the Armagnac is soft and smooth, it is the roundness that will dominate.  Alternatively, when the wood’s tannins take the lead, it is the astringency of the eau-de-vie that will be expressed.

 

The persistance of the bouquet extends the experience.  The eau-de-vie takes its time to make an impression.  Thelength confirms the quality of the eau-de-vie.  A peacock’s tail finish is the ideal ending given by Armagnacs with great amplitude. A magical moment indeed, where the fan of perfumes are liberated in perfect harmony.

Tasting Armagnac is always an original and compelling experience where growing sensations need plenty of time to fully express themselves.
